Griddle Cakes

Sift together and set aside:

1          -           cup                  flour

2          -           teaspoons        baking powder

1          -           tablespoon       sugar

-           3/4       teaspoon          salt

Combine:

1          -           -                       egg

-           3/4       cup                  milk (at room temperature)

2          -           tablespoon       melted butter (or lard)

 

A)  Whisk until just moist. Lumps are normal.
B)  Place griddle over medium heat. Grease lightly.
C)  Pour batter to desired size.
D)  When top of cakes bubble, turn and cook other side.
E)  Serve with butter and syrup.
